This soup is packed full of flavour – it’s spicy, coconutty and hearty.
I made it with a combination of carrots, sweet potato and butternut squash – but you can make this with your favourite root vegetables, plus adjust the ingredients to make it as spicy or mild as you like!
I like to put a spoon of soy or coconut yogurt through it just before serving to make it extra creamy.

Garlic Roasted Artichoke
One of my favourite dishes – garlic roasted artichoke.
