Ingredients
- 400 g Sweet Potatoes
- 14 Pitted Dates
- 6 tbsp Maple Syrup
- 100 g Plain Flour
- 1 tsp Baking Powder
- 2 tbsp Coconut Oil
- 100 g Oat Flour*
- 5 tbsp Unsweetened Cocoa Powder
- 40 g Plain Dark Chocolate Chunks
*No oat flour? No problem! Just blend some oats into a fine powder.

- Large Mixing Bowl

- Greaseproof Paper

Method
- Peel and cut the sweet potatoes into chunks
- Boil for 10 minutes or until soft
- Add the dates, sweet potatoes, maple syrup and coconut oil into a blender
- Blend until smooth
- Add the flour, baking powder, ground oats and cocoa powder to a large bowl and mix
- Add the blended ingredients, mix well
- Add the chocolate chunks, mix
- Line a baking dish with greaseproof paper
- Pour the mixture into the lined baking dish
- Cook for 45 minutes at 180oC
- Leave to rest for ~10 minutes before cutting and serving
