Vegan Sweet Potato Brownies

My recipe for vegan sweet potato brownies. Feel free to change the dark chocolate for a different type, nuts or dried fruit. It’s all zen!

Ingredients

  • 400 g Sweet Potatoes
  • 14 Pitted Dates
  • 6 tbsp Maple Syrup
  • 100 g Plain Flour
  • 1 tsp Baking Powder
  • 2 tbsp Coconut Oil
  • 100 g Oat Flour*
  • 5 tbsp Unsweetened Cocoa Powder
  • 40 g Plain Dark Chocolate Chunks

*No oat flour? No problem! Just blend some oats into a fine powder.

Equipment

  • Blender
  • Large Mixing Bowl
  • Baking Dish
  • Greaseproof Paper
  • Oven

Method

  • Peel and cut the sweet potatoes into chunks
  • Boil for 10 minutes or until soft
  • Add the dates, sweet potatoes, maple syrup and coconut oil into a blender 
  • Blend until smooth
  • Add the flour, baking powder, ground oats and cocoa powder to a large bowl and mix
  • Add the blended ingredients, mix well
  • Add the chocolate chunks, mix
  • Line a baking dish with greaseproof paper
  • Pour the mixture into the lined baking dish
  • Cook for 45 minutes at 180oC
  • Leave to rest for ~10 minutes before cutting and serving
